Salads

Salads are so easy when you have a well stocked fridge. My favorite add ins: spinach, romaine lettuce, sugar snap peas, bell peppers, cheese, tomatoes, mushrooms, cucumbers, chicken breast, walnuts, slice almonds, hemp hearts, chia seeds, etc. I make my own balsamic dressing with about half balsamic and half olive oil. I add a wee bit of honey to mine which seems to help bind them together and adds a wonderful flavor.



This salad was awesome. My usual ingredients but I added hemp hearts and one chicken breast from a rotisserie chicken

Spinach salad with a tin of flavored tuna and a tomato (I was short on time that morning)



romaine leaves, grape tomatoes, mushrooms, bell peppers, kalamata black olives, sundried black olives. Topped with balsamic dressing.

romaine and red leaf lettuce, craisins, walnuts, and strawberries. Topped with a wee bit of Kraft raspberry vinaigrette dressing

Taco salad: romaine leaves, black olives, peppers, avocado, onion, sour cream and salad with a sprinkle of taco seasoning on top. I crushed up a few whole grain taco chips and added them to the salad too.


Greek salad: red onion, cucumber, romaine, black olives, tomato, light feta cheese, and Greek seasonings. Dressing is olive oil and white vinegar.
