Banana oatmeal cottage cheese pancakes


I found these online the other night and decided to give them a try. I've tried a few other variations but have to say these were the best ones yet. I think the baking powder helps keep them fluffy and the oatmeal give them substance. I had these as my morning snack at work and they were delicious as is, I didn't use any syrup or jam on them.

  • 1/2 c. oatmeal (calls for regular but I used quick oats)
  • 1/2 a ripe banana
  • 1/4 c. cottage cheese
  • 1 egg or 2 egg whites
  • 1 tsp baking powder
  •  1 T any milk or water
Blend all of the ingredients in a blender or magic bullet. Cook on medium/low heat (mine was too hot which is mine turned out so dark, but they still tasted great!). Use oil or cooking spray so they don't stick and cook them 1/4 c. of the mix at a time. When they start bubbling through you can flip them but also check on how dark they are in case you have it too hot like me haha.

Someone at work commented that they smelled good but he also said 'they look healthy' haha. I think it was just because they were so dark.
