'Taco' salad


I wanted to switch things up for my meals so I decided I wanted taco salad for lunches. I originally just wanted something with ground beef so I went from there. This salad is delicious and tastes like a taco. You could definitely add taco chips if you wanted to but I wanted to keep it lower calorie and lower in carbs. I used Kraft BBQ Ranch dressing but would have just used sour cream/Greek yogurt and salsa if I had it.


This is what it looked like before I stirred it up :D Feel free to add or remove things based on your preferences but what I used to make one serving is:
  • 3/4 c. browned ground beef made with taco seasoning
  • 3 c. spinach or romaine lettuce, chopped
  • 5 cherry tomatoes, halved
  • 1/4 of a red bell pepper, chopped into large pieces
  • 2T peaches and cream corn
  • 2T black bean, canned
  • 30g shredded cheddar cheese
  • 1T BBQ ranch dressing
Nutritional information for the above serving size:
Calories 404, Carbs 21g, Fat 20g, Protein 36g.



After my poor eating on vacation I really tried to clean it up this week lol. Things definitely snuck in there but I did manage to eat fairly clean. I bought a small bag of coleslaw and used it up within two days so I'll be buying a bigger bag next time!

An easy approach to eating healthier without really trying is just try to eat more veggies. As I've stated before if you eat just lean protein and fibrous carbs you're going to reduce your calorie intake without much effort. Also remember that carbs aren't the enemy! Your body is fueled by carbs and requires them to function. People follow low carb diets to lean out because your body burns other fuel sources (fat and then protein) if you're not fueling your body with carbs.
