Sweet Potato and Black Bean Enchiladas


When I got back from Mexico I kept the vibe going by making these amazing enchiladas from acouplecooks.com. This recipe is also from the calendar that my 'second parents' bought me as a Christmas gift and this is the fourth recipe I've made from it.

You can find the recipe here on their website and other awesome mostly vegetarian recipes. I've found that a lot of them are also vegan or could easily be made vegetarian.

I ended up with a pan of 7 enchiladas and a container of the filling left over so I froze that to use later. This is a high carb meal but as a vegetarian I do eat a lot of carbs. You could always use less potato and more black beans to up your protein intake for this dish.

I didn't have salsa verde so I just used regular salsa and it turned out really well. Next time I will try it will salsa verde though and will report back here.
