I loooooove eggs in any form, but poached are one of my favorite.
Omelets are one of my favorite after workout dinners. It's usually around 7 by the time I'm done working out and showering. I use free run eggs, egg whites, and basically the same ingredients that I use in my salads.
Veggie frittata: bell peppers, cucumbers, mushroom, tomato, low fat swiss cheese, egg & egg whites. I used half an avocado mixed with pico de gallo from Costco
