Hodgepodge stirfry


The other day I was looking for something to make for dinner with all the stuff I have in my fridge that needs to be used. This spaghetti squash seems to be lasting FOREVER. So I pulled out my veggies and threw them in a pan. This was the end result and it was delicious.

Ingredients:
  • onion
  • minced garlic
  • celery*
  • sugar snap peas*
  • peppers
  • spaghetti squash
  • spinach
  • salt & pepper
Preheat pan to medium-low heat. Use whatever oil you please - I used coconut oil which gave this a great flavor. I keep chopped onion ready in my fridge so I added about 2 tablespoons of it to the pan once it was heated. Once they've softened a bit add the garlic. Slice the celery very thin diagonally so it cooks fast. I like my veggies still crunchy so I added everything except the spinach at once. After a few minutes and they're almost ready to your liking add the spinach on top and put a lid on it to wilt it. Voila! A yummy dinner with a crap load of veggies. I'm realizing it's not that hard to fit them in :)
