This is what I took for lunch last week and I enjoyed it so much I'm doing it again this week. I prepped enough for 4 days, or 3 if I end up pulling one out to munch on in the evening. Remember: if you have healthy food ready to grab you're more likely to maintain a clean diet instead of reaching for something 'fast' and gross.
I have my celery and tomatoes prewashed and ready to go in my fridge in my Rubbermaid produce savers. They really are amazing. Bell peppers keep in there so long and my celery is still crunchy by the end of the week!
So this morning while my chicken and rice were cooking I chopped up English cucumber (1/3 of one in each container), celery sticks, carrots, and added the tomatoes in each one. My mom split a bag of snow peas with me tonight so I added them in as well. I eat this for my afternoon snack or I'll grab some if I'm still hungry after lunch. I enjoy this 2-3 tablespoons of roasted red pepper hummus.
I bought a huge container of the hummus from Costco because I go through the small containers so fast so I'm trying out freezing half of it. I'll let you know how it goes. Or if you've tried it before maybe you can let me know haha!
