Sunday meal prep - chicken breasts and spaghetti squash


I've been really organized the last few weeks and have gotten meals and snacks prepped for at least 3 days of the week. Today I had everything done before 11:00 AM haha. I woke up, had breakfast, and started cooking.

This week's lunches consist of chicken breast: baked at 350F, I used minced garlic in olive oil and lemon juice, and brushed them with that mixture. Then seasoned with thyme, rosemary, parsley, and some oregano. Bake for around 30 minutes, depending on thickness. These were fairly thick so I baked them for 20 minutes and then put my meat thermometer in and it took probably another 20-30 minutes.


I used my new rice cooker again (it's pretty lovely - so easy to clean up, it doesn't stick to the pot!). I followed the instructions for measuring the rice and water, and added in salt and pepper and my beef bouillon paste. No need to stir - it boils pretty good so it mixes itself up really well.

The spaghetti squash was prepared on Friday night when I made dinner for my mom and aunts. I don't know for sure but I think you bake it at 375F for 30+ minutes. I didn't make it but I was looking at a recipe today to make a casserole with it (there's sooooo much left!)


I think people are going to be jealous of my lunches this week =D Doesn't this look lovely? Depending on how many calories (after I enter it into myfitnesspal) I'll probably have an apple at lunch time too.
