Zucchini quiche


On Sunday afternoon my mom came over for dinner and she had a zucchini she needed to use up so she went looking in the Canadian Luthern Ladies cookbook and she found this recipe. We added some spaghetti squash since we didn't have enough zucchini and it tasted really good - you could probably try it by swapping it completely with spaghetti squash.

I'd also like to note that I would have preferred it with less bisquick if any at all. I'm going to try it without it next time I make this. Even with the bisquick 1/6 of our dish was around 200 calories. Here's the recipe:

  • 3 c grated zucchini
  • 1 c bisquick
  • 1 small onion
  • 4 eggs (I used 2 eggs and 1/2 c egg whites)
  • 1/2 tsp butter
  • 1/2 c oil (we used 1/4 c)
  • 1/4 tsp pepper
  • 1/2 tsp salt (we used half of this)
  • 1 c grated cheese (we used about 1/3 c)
Bake in a 10" pie pan (I don't have one so we used a 9x11 pan) at 350F for 30-40 minutes. Let stand 5 minutes for 5 minutes before cutting. Serves 5-6. 


I enjoyed mine with a salad made from red leaf lettuce, peppers, and cherry tomatoes, with a balsamic dressing.
