Another pancake recipe



I'm always on the search for new recipes and breakfast ideas. I made these pancakes a few months ago and I liked them but I tried a variation of that recipe and have had them all three mornings of this long weekend.


I like this version better: it tastes really good, blends up nicely, and cooks really well. It makes one serving and is very macro friendly.

Preheat a non stick pan on medium low heat while you prepare the batter. Blend the oatmeal before adding the other ingredients. Then add the banana, egg, cottage cheese, cinnamon, and vanilla, and blend until smooth .

I cooked these the first two days in coconut oil but I wanted to save on calories this morning so I used nonstick spray; they turned out great both ways but the coconut oil gives it a great flavor.

Shortly after you pour them you can add chocolate chips or blueberries (or whatever your favorite pancake addition is). They're ready to flip when they have bubbles around the edges and a little bit through the middle. Check them after a minute or so and transfer to your plate when it's perfectly cooked and brown. You could do 4 small pancakes but I cooked half of the batter at a time for two larger pancakes.

Top them with syrup, jam, fruit, etc. and you have a delicious breakfast :)

  • 1/3 c. quick oats
  • 1 large egg
  • 3T cottage cheese*
  • 1/2 medium banana
  • dash of cinnamon
  • splash of vanilla
*The amount of cottage cheese needed will depend on the size of egg and banana. Try adding 2T to begin with and add more if it's not the right consistency.
