Greek yogurt pancakes


It would appear that pancakes have become my new favorite breakfast. I have a few different recipes that I switch between but I have Greek yogurt to use up and I really don't care for it on its own - I like it in smoothies and now pancakes!! I have four now in my Recipe Index. They all come out a bit differently so try them all out and see which one is your favorite.


This one is really moist and makes a thinner pancake and has a bit of a different flavor than the cottage cheese version.
  • 1/2 banana
  • 1/4 c. quick oats
  • 2-3T plain Greek yogurt
  • 1 egg
  • cinnamon
  • vanilla
  • 1/2 scoop protein powder
Preheat a non stick pan over medium low heat (4 on my stove). I like using coconut oil because it adds to their flavor and helps reach my fat macros. I added the protein powder because they were carb heavy and didn't have much protein without it being added. You can leave it out but make sure you get your protein another way (hard boiled egg, egg whites, etc)

I get four medium sized pancakes with this recipe so I stack two together and enjoy them like that. I use regular syrup but jam, fresh fruit, or whipped topping would also be great on these. Try them any way you your little heart desires!! Enjoy!
