Baked broccoli


Oh my gosh, I can't believe how yummy this turned out. I was inspired from the veggies my cousin made when she was staying with me last year and wanted something different from steamed broccoli so I baked it!


I preheated my oven to 425F and spread the broccoli out in a deep metal baking pan (this makes shaking it easier but you can use a baking sheet). Cut any big chunks into smaller pieces so they are all around the same size.

Drizzle with olive oil and season as you please. I used sea salt, pepper, garlic and onion powders, and a wee bit of Johnny's garlic spread.

Let it bake for 10 minutes, give it a shake, and test it with a fork to see how tender it is.

*You should keep veggies kind of crunchy when cooking them to ensure they keep as much of their nutritional value as when they're raw. If you're like me though my stomach has a hard time digesting raw veg so I have to cook it at least a little bit.*

I baked mine for a total of 25-30 minutes, sorry I can't remember because I was setting a timer for my salmon burger as well. After 20 minutes just keep checking every 5 minutes to see if it's the tenderness you like.
