Going (mostly) vegetarian

Hello everyone, I've been pretty quiet on here again because I've been fairly busy with my social life and I pretty much eat the same thing most of the time. My cousin and her boyfriend went vegan last month and are loving it so I decided that I want to work my way to being vegan. It's too drastic of a change for me so I decided to try being vegetarian first.

I started almost two weeks ago but have had meat or meat products a few times. I do still have some meat to use but I might just end up giving the last ground beef package to my mom. I did have the twice baked potato last night but that was the first meat product I had since Saturday night.

Anyway, enough of my meat eating confessions - ultimately I want to go vegan. There are a few reasons behind this decision:

  • I've never been a huge meat eater: the thought of eating an animal has always bothered me
  • carbon foot print: raising and processing meat requires a lot of power and machinery
  • the treatment of animals: even the cows used for dairy milk are treated poorly.
I think if you're not ready to go vegetarian or vegan but are concerned about animal treatment that you should buy from local farmers and check out their farms and establishments. I know it sounds silly but I really love my eggs so I think even if I get to being vegan that I'll still eat locally bought eggs from farmers that have free range chickens that are well cared for.

Even before making this decision I was way off track with my meal prep and planning. I needed a change in my daily meals so I have some saved on Pinterest and am looking forward to trying out new recipes. I did buy some processed, ready-to-eat foods to help me out in the meantime: black bean burgers, sweet potato fries, and edamame.

I have some fresh stuff in my fridge but it's not exciting enough to post about so once I start trying these new recipes I will hopefully be posting more and sharing them with you. The picture at the top was from Stella's, this amazing breakfast place here in Winnipeg. They do have non breakfast dishes but if I'm going out I usually order breakfast because it's my favorite meal of the day. The veggie patties that came with it were soooo good and tasted like stuffing. I wish I could create them at home because they were delightful.

The funny thing about changing your diet is you get to eat new things and discover stuff you didn't even know you liked!

I hope everyone had a great Thanksgiving (in Canada) and you will hear from me soon :)

Cheers,
Kelsey
